Feel-Good Tortilla
This is a delicious, low fat meal.
350g asparagus
200g frozen peas
6 eggs
A tablespoon of rapeseed oil
A handful of fresh herbs (parsley or dill prove to be delicious)
Salt and pepper
Clean and trim the asparagus and snap off those woody ends. Cut each spear into three pieces and blanch in boiling salted water for 10 minutes. Obviously timings vary on asparagus sizes so check as your cooking. You want them to be just cooked. Drain and rinse with cold water. Cook the peas in salted water and rinse well. Beat the eggs and then stir in the asparagus, peas, and herbs. Season. Heat the oil in a frying pan, gently pour in the egg, asparagus and pea mixture. Reduce the heat and cook very slowly for 10-15 minutes when the eggs are just set. Place the pan under a hot grill until the top is set and starts to turn a golden colour. Remove from the heat and allow to rest before slicing into wedges to serve. A fresh salad goes well as an accompaniment.
If you are not watching the pounds try adding a dash of single cream and some grated parmesan in the raw egg mixture.
