Asparagus and Goat's Cheese Tarte

This is absolutely delicious and easy. Serve with a tomato and basil salad.
225g puff pastry
A bunch of asparagus, trimmed and tossed in olive oil
110g goat’s cheese crumbled or blue cheese for a variation
3 tbsp of parmesan shavings
Preheat the oven (220c, gas mark 8) and put in a baking sheet to heat.
On a sheet of non-stick baking parchment roll out the pastry as thin as paper.
Scatter the shavings over one half of the pastry and fold the other half over the top.
Roll again until back to its original thinness.
Arrange the asparagus neatly on the pastry with a 5cm border.
Scatter the goat’s cheese over it.
Cover loosely with cling film and chill for at least half an hour.
Transfer parchment with tarte on, on to baking sheet.
Bake on hot baking sheet for 20 minutes until puffed up round the edges and well browned.
